So yes today is National Watermelon Day, but really it’s just an excuse for me to share a fun recipe and some health facts with you.
Watermelon Slushie Recipe
First off, I don’t know about you all, but sometimes, especially during the summer, I’ll buy and cut up an entire watermelon, but won’t finish it in time (mostly because I forget about it). So the other day, when I realized our watermelon was looking a bit mushy, I took all of our left-over watermelon (probably at least 2 cups), a handful of mint & a cup, of ice, blended it all together and made the most delicious watermelon slushies! The kids loved them but I loved them even more.
