Easter Egg Snacks
Easter is one of my family’s favorite times of the year. Here in the midwest, it marks the beginning of spring and who doesn’t love springtime (especially after a cold and rainy winter)? As a mom of two, I sometimes have to get creative about presenting healthy snack options. My youngest can be super picky and at times, unwilling to try new foods. Plating healthy snacks in plastic Easter eggs was an easy and fun way for my kids to enjoy their snacks. I stuffed the eggs with blackberries, strawberries, almonds, cucumbers, and cherry tomatoes. Some other fun options are cheese cubes, carrot sticks, grapes, peas, roasted chickpeas, other berries, pretzels or chopped hard boiled egg. Really the options are endless.
As for my kids, let’s just say there was nothing left minutes later. My picky boy tried cucumbers for the first time & my 5-year-old requested every meal be in those eggs. LOL! Needless to say, Easter egg snack time was a total hit!
