Anyone who’s eaten at my house knows that I’m addicted to my crockpot. I haven’t tried too many breakfast recipes in the crockpot, but the ones I have tried you can cook overnight (AMAZING!). Who doesn’t love waking up to the scrumptious smell of breakfast hot and ready to go? Plus, it just saves you a ton of time in the morning, whether you’re rushing your kids, or yourself, out the door.
So when I googled breakfast crockpot recipes earlier this week, I found this intriguing list from Recipe4Living.com. I love me some oatmeal, and so do my boys, but the recipe here didn’t quite fit my family’s tastebuds or fit the eating clean bill. Feel free to make it the way they list it, but here’s how I turned it into a healthy yet delicious breakfast that fit my family’s needs. (And yes, I doubled it . . . remember I love oatmeal and so do my boys).
Sara’s Delicious Healthy Crockpot Oatmeal:
Ingredients:
4 cups of almond milk
2 cups rolled oats (My favorite is Coach’s Oats, which is also available at Costco.)
4 chopped apples (I used Granny Smith.)
1 cup slivered almonds
1 tsp. cinnamon (plus a little extra)
pinch of salt
Directions:
Spray the crockpot with PAM Cooking Spray. Add all ingredients and mix. Cook on low overnight. Add milk if you like, but I promise you it tastes divine without.
