Get Green for Self-Care

“Eat your veggies!” How many times have you said this to your kid? Or how many times do you remember your parents saying this to you?

There are so many forms of self-care that we do for our kids on a regular basis that we seem to neglect for ourselves. I know for me, just like hydrating, I have to be conscious on a daily basis to include my greens. I always feel so much better when I do. 

So here’s a list of a some easy ways to sneak in greens for ALL of your meals:


  1. Scrambled eggs on a layer of spinach (or arugula, kale, etc.)
  2. Add greens to any scramble, frittata or breakfast burrito (my favorite way).
  3. Add greens to a morning smoothie.

I’ve been asked a lot about what I eat during pregnancy. The honest truth is I don’t think much more about it than I normally do. This is today and pretty typical: an egg white with veggies wrap, including avocado for some healthy fat, banana (fiber is always helpful during pregnancy), my favorite @hint water and yes, some french fries. They have been my craving this pregnancy . . . I can’t explain it, but yes, I let myself have them – far more often than I normally would (or should).   1. Super Green Salad – challenge yourself to add as many greens as possible
  2. Sandwich Lettuce Wrap – literally wrap your sandwich in lettuce
  3. Stir Fry with Greens – I do this on a weekly basis for dinner and eat the leftovers for lunch.

Switched up the stir fry last night with some shrimp (We usually do chicken or tofu). Cooked it and mixed it up in the wok with broccoli, portabella mushrooms, bell peppers, rosemary, thyme, teriyaki sauce, salt, pepper, and olive oil. Such an easy one to make with the kids. The boys love taking turns adding the veggies and stirring the pot. Just recently discovered that Landon loves seafood so he and I went to @santamonicaseafood yesterday morning to pick out the shrimp. Love seeing the boys' palates grow.   1. Zucchini noodles (with sauce and/or meatballs) – I love doing this with a spiralizer. 
  2. Protein or veggie bowl – layer in some broccoli 
  3. Edamame grain dish – when I have leftovers I just mix edamame with rice/farro/quinoa/couscous and add soy sauce. 

Honestly, the biggest thing holding me back right now from losing my baby weight a little bit quicker is my food choices. Coming off of a pregnancy full of 🍝 and 🍟 cravings has made it a little bit trickier to change my eating habits as well as simply being a mom of three who likes to eat 🍕 and 🍦 with her kids. My goal (after the weekend of course 😉) is to start to buckle down and think more about my own food choices. This plate of veggies and rice that I had before our 10 day trip to Chicago is going to become a more regular thing.
